Heart Healthy Sandwiches

2 slices linseed rye bread
1-2 slice lean meat, such as chicken,turkey,smoked meat,beef or lean ham
3 leaves lettuce
thin tomatoes, slices
thin cucumbers, slices
pepper
mustard

put mustard on both pieces of bread.

put lettuce on one slice.

top with tomato, sprinkle with pepper.

top with meat, cucumber and remaining
piece of bread.

cut in four and wrap in plastic wrap or put in plastic sandwich container.

refrigerate until use.

1 1/2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/8 teaspoon salt
1 1/2 cups skim milk
2 tablespoons corn oil
2 egg whites

Combine dry ingredients in large bowl.

Add milk, corn oil, and mix until just moistened.

Beat egg whites in small bowl until stiff peaks form.

Fold into batter.

Place on greased griddle (medium high).

When bubbles begin to form, flip pancakes.

Serve with strawberry garnishes and warm real Vermont maple syrup.

My dad had open heart surgery over a year ago – point blank our whole family needs to change the way we eat – and have to a point, but not to the point of being completely heart healthy. What are some good recipes for becoming the heart healthy family we should be? I know lots of garlic, turkey instead of beef – stuff like that but does anyone have any fesible YUMMY recipes they’d care to share? Much thanks.

A family member of mine is recovering from a heart attack. We want to keep as much flavor as we can, but make things as healthy as possible. I am a pretty good cook and am open to creative options.
He is on a low sodium, low fat, low cholesterol diet.

Zucchini Bake.
Sounds gross, tastes great.
Yup, this will meet the criteria, because it serves six,
and it is extra virgin olive oil the cholesterol is low per serve.
The bacon only adds a tiny bit of yum to each piece but is not overwhelming in fat or cholesterol, the hint is to use quality ingredients.

3 x medium Zucchini (peeled then grated)
5 x eggs (lightly beaten )
1 x large onion (finely chopped)
100g diced bacon (fat cut off)
1 cup lite cheese (grated)
1 cup self raising flour (sifted)
1/2 cup extra virgin olive oil
Salt + Pepper to taste (less salt more pepper for heart patients)

***Combine all ingredients after there respective grating, chopping, etc. season to taste with salt and pepper.
(Dont use very much salt or you are defeating the purpose of the recipe :) )

***Place in an 6″ x 11″ oven proof dish

***Bake in 180 degree celcius oven for 40mins or until golden brown.

**Yum, Yum! Serve with salad. (no dressing!)

PS I always think it tastes better the next day after its been refrigerated then reheated. I dont know why but it is more flavoursome.

in the food processor mix walnuts, cranberries, relish, and black pepper.. together

mix with mayo and the shredded Rotisserie Chicken..

there you go..home made chicken salad..

can be eaten with crackers, chips, tortillas..and wrapped as a chicken wrap if you like..

OR

Chicken strips baked in the oven..

wrapped in Tortilla, lettuce, mayo, mustard,

Basically like the Mc Donalds Chicken Wrap but home made.. :)
