Baked carrot fries
A pound and a half. Carrots
1 tsp. Sugar
2 T olive oil />
½ tsp. Sal
2 T fresh rosemary, chopped
A pinch of pepper />
Preheat oven to 425 degrees and line a tray with aluminum foil. Peel carrots and cut each end and the end of each. Cut carrots in half cross-wise,
then cut lengthwise, then cut again lengthwise.
Combine the carrot, olive oil, salt, pepper and rosemary and stir just until evenly coated. Spread carrots in the pan as possible.
Roast the carrots for about 20 minutes or until carrots are tender. Serve warm or cool slightly at room temperature.
Healthy Recipes for Kids # 2: Chicken Tortilla Soup
This is a family favorite and is easy to mom and dad, both in preparing and cleaning!
Chicken Tortilla Soup
½ onion, chopped
½ tsp. Garlic, minced
4 tsp. Cilantro, chopped

30 oz Chicken />
8 oz can tomato sauce
½ package Taco seasoning
14 oz can Mexican style stewed tomatoes or Plain
4 oz and a half. can Diced />
1 small can corn, drained
Worchestire 1T />
4 boneless, skinless chicken breasts (can be frozen) />
Place all ingredients in a crock pot and cook on low for 8 hours. A half hour before serving, remove chicken and shred. Place chicken in the soup and cook the rest of the time (half hour).
Serve with cheese, corn tortillas, avocado and sour cream.
Healthy Recipes for Kids # 3: baked spaghetti
Baked Spaghetti
1 pound lean ground beef
Wheat Spaghetti 10 oz
2 C mozzarella cheese, grated
2 26 oz jars of your favorite spaghetti sauce (make sure the sauce contains healthy ingredients and no sugar) />
Preheat oven to 350 degrees and spray a 9 x 13 pan with cooking spray.
In a large skillet over medium heat, brown ground beef drain and mix in spaghetti sauce ground beef.
Prepare pasta according to packaged instructions and drain.
Spoon a third of the spaghetti sauce mixture in the bottom of your pan and then mix the remaining mixture of spaghetti sauce with cooked spaghetti. Pour into prepared pan and then cover with grated cheese.
Bake for 25-35 minutes until golden and bubbly. Let stand spaghetti in the oven for 10-15 minutes before serving. Serve with a healthy salad and garlic bread. Enjoy!
